In rhis video, Betty demonstrates how to make her sweetly divine Morning Coffee Blueberry Muffins. They are just the right texture and flavor–not too sweet, because the fresh blueberries take care of that! Ingredients: 1 egg, well beaten 1/2 cup sugar 1/2 cup vegetable oil (I used canola oil.) 3/4 cup milk (I said 2/3 cup in the video, but 3/4 cup will be better.) 1/2 teaspoon ground cinnamon 1 teaspoon vanilla 2 cups self-rising flour 1 cup fresh blueberries, washed and dried with paper …

thank you betty… these taste way better then the box kind….ive found using a ice cream scoop works well for scooping the muffins mix in the exact amount .. makes it quick and easy… also putting a little of the flour on the berries will help them not to sink to the bottom…. i loved your presentation…. thanks again

Thanks for your comment! Is there any particular type of cake you have in mind–I have a few posted that you might look at: Strawberry Cream Cake, Lemon Filled Angel Food Cake, Applesauce Cake with Penuche Icing, Carrot Cake with Cream Cheese Frosting. The easiest one is the Lemon Filled Angel Food Cake–and it looks very pretty and dramatic. I think I made it for Mother’s Day!

Betty, would it be possible to see/make a all chocolate variant of these? The bakery up the street makes the most amazing and most moist fresh muffins ever, but their recipe is a family secret and they just wont give it up
Is there a way I can make the blueberry ones as all chocolate or even all corn?

You should be able to do that. Just keep everything the same, but add about 1/4 cocoa, and then add extra sugar to sweeten the cocoa. Measure the sugar to taste–I would guess about 3/4 cup. If the muffin batter seems too stiff, add a little milk. These should be great!

Yes! You may leave out the vanilla. You don’t need to change anything else, but you may add an extra egg, if you want.

betty i like to use organic to make for muffin to taste better then preservation food. you can go to whole food market there a lot of good organic product. good price too.

That’s a good idea! I grew up on a farm where we grew our own vegetables, and they were grown in a very healty fashion. You never know exactly what you’re getting at the grocery store! Thanks for your comment!
