What is instant coffee made out of, in layman's terms? How is it made?

Instant coffee is made with the cheapest bean possible,
the companies will actually pay some poor shmoe in a 3rd world country about $500 or so for his entire crop,
the poor shmoe excepts because he has to feed his family
and the company gets rich selling you a bean that’s been over processed and freeze dried to try to give it some taste
hint – once you’ve opened your can of instant it instantly begins to detiorate
and yes, it has just as much caffeine as "regular" coffee
Trust me, once you’ve ground your own beans you will never pick up a cup of instant (better known as dishwater)again.

Instant coffee is absolutely real coffee. There is no mystery chemical process that takes place. It has the same amount of caffeine.
Simply put, instant coffee is just regularly brewed coffee with most all of the water removed!! There are two methods used Freeze drying and Spray drying. Basically, freeze drying process: you start with regular brewed coffee, is is allowed to sit until a lot of the water evaporates, then you are left with a concentrate, this concentrate is quickly frozen to about -40 Celsius, where the extra liquid dissipates and you are left with concentrated coffee crystals. The Spray drying process starts out the same with brewed coffee and then is allowed to evaporate into a concentrate, and I’m iffy on the details after that. However, below I’ve listed directions to a website that will explain it to you.
